A surprising taste pairing for a wonderful salad.


Did you know that carrots, lemon and mint go so well together? They absolutely do!

With just 4 basic ingredients, this salad is the definition of positively tickling your taste buds.


If you have one, definitely use a food processor to shred your carrots - especially if you're doubling your recipe to last you the entire week. Did I mentions it hold rally well in the fridge? It actually tastes even better the next day that it does the first.

I know at least some of you are thinking it and may ask this: You can certainly use dry mint, just maybe not the first time you make this salad - I don't want you to miss out on the true potential of this dish.

Yumminess using a bit of taste paring magic.


Yes, they do taste as good as they look.


While I provided a basic recipe for making this side dish, feel free to give it your own touch. If you love potatoes, add more. If you love mushrooms, focus on having more mushrooms.


You may choose to omit the nutmeg if you wish - however I'd encourage you to at least try it once. It does not overpower the dish - instead it gives it a nice, interesting flavor that makes you want to come back for seconds. No, I'm not just saying that since this is my own creation.


Lastly: I did not salt the potatoes since I find cheese is in itself quite salty - enough for the entire dish. The soft margarine used to cook the mushrooms is also salty.

A fresh take on a chicken meal.



This one-pot recipe is not only easy to make, but also incredibly tasty and amazingly fresh due to the lemon zest. It will also keep well in the fridge and its taste will only get better the next day.


Grate your lemon and reserve the juice for a salad dressing - such as the Minty Carrot Salad, which goes very well with chicken.
