A delicious mix of spiced beef, cheese and other savory fillings, tightly wrapped in a tortilla and enjoyed without a need for utensils.

Despite their international popularity, burritos are easy to make.

Ground beef is spiced and cooked over a bed of caramelized onions.

For our variation, the traditional tomatoes, bell peppers and black beans were added - yet combinations are endless and completely up to you.

The mix is added to a large tortilla, generously covered in cheese and rolled tightly. For added color and flavor, each burrito has to be lightly fried in a tiny amount of butter/ margarine - which will also help melt the cheese and make everything stick together. Absolutely delicious!

The name of this dish translates to <little donkey>, "burro" being the Spanish word for <donkey>. It has been suggested that this name choice came either from the way in which donkeys can carry many things on their back, or possibly the way that rolled cargo (such as bedrolls) look when they are placed on a donkey's back.

Just like we've gotten you used to by now, this recipe was also built around balance and its ingredients, as well as their respective quantities, were chosen to help provide a nutritious meal that attempts to follow the guidelines for healthy eating.

A widely popular snack revamped into a satisfying meal.

This colorful treat started off as plain corn tortilla chips, covered with cheese and jalapeno slices, which were lightly baked in the oven. And, of course, there's a story that goes with that. It is said that, at the beginning of the 1940s, in the Mexican city of Piedras Negras (just over the Texan border), Mamie Finan and 3 friends - wives of soldiers stationed at a nearby army base, found themselves in The Victory Club restaurant. When Mamie asked for an original snack to pair with their cocktails, the man who served them went to the kitchen and, finding no one there, improvised this simple recipe which brought him praises from the women. The name of this man was Ignacio (Nacho) Anaya and the dish was since known as Nacho Especial - Nacho's Special, after his nickname.

Nachos have since evolved in a multitude of ways, include a variety of ingredients and have gained international popularity.

Our dish uses all the 3 original ingredients. We also added beans and vegetables - to make it into a nutritious meal, that is well balanced.

Fragrant and tangy Mexican soup.

Seemingly descending from the ancient Mayan cuisine, this delicious soup of the Yukatan peninsula can be a comfort food during hot or cold days.

A chicken soup at its core, this delicious broth is flavored with the mildly tangy and sweet Yukatan lime. If those are not available to you, feel free to use regular limes. We tried it and I can guarantee that the end product will be also awesome.

While this soup is a spicy one, we tailored the recipe for every taste - with only one optional seeded habanero pepper. If you love spicy food, we encourage you to be generous with your habaneros.

Decorate your soup with tortilla chips and strips, avocado slices and fresh cilantro.
