Georgia bean stew, fragrant and refreshing.

If you read the subtitle and though to yourself: <Can a bean stew really be refreshing?>, I understand perfectly. I mean beans and refreshing don't normally go into the same sentence. But trust me, this stew really is refreshing! Come to think of it: don't trust me and make it yourself. It will be such a wonderful surprise for your palate.

Because I feel like spilling the beans (pun intended), I have to confess that there are 2 ingredients that make this dish so special. One is pomegranate concentrate. The other is a small bunch of mint. If you immediately though to yourself that it must be the these 2 ingredients that give this dish its freshness, you'd be right. Think sweet and sour, plus subtle minty taste - food heaven.

In order to provide you with enough protein, this dish combined red beans and walnuts. Yum, yum!

No need for an Order of Cooking list this week. Since these recipes have little to no downtime, you can make your menu in any order you prefer.

If you're spreading your meal prep for several days, cook your beef, chicken and shrimp first, for maximum freshness. Keep Nachos for last - as all of the ingredients can be safely kept longer in the fridge.

Enjoy!

Creamy, cheesy shrimp tacos.

While the history of tacos precedes the arrival of the Spanish people onto the American continent, tacos are now one of the most popular Mexican foods.

Without argument, corn tortillas are at the core of this dish, yet we could not have these without the process of nixtamalization, developed by the Aztec and Mayan civilizations. Dry corn is soaked and cooked into an alkaline solution (a mixture of lime and ash, at its origin). In turn, this renders the corn more easy to grind, increases its flavor and nutritional value.

Fresh vegetables - lightly roasted in the pan, spicy-creamy shrimp and melty cheese to glue together fresh tortillas make this dish amazing. You'll want to make the recipe over and over - since it's pure yumminess!
