Trinidad Chicken Pelau

A delicious one pot meal.

For this recipe of our Budget Friendly Menu we chose to cook with chicken. And while chicken can also be expensive, if you buy chicken drums when they are on sale, you can put together a delicious and affordable meal for your family.
Just like we did for every other recipe this week, we took our inspiration from one of the countries who cooks the most chicken per person in the world: Trinidad.
And there wasn't a dish that we would have liked to try more than the popular Chicken Pelau.
Similar to a recent Dominican recipe we tried previously, we are using caramelized sugar to brown the chicken. Keep a close eye on your pot, you do not want your sugar to burn and give the dish a bitter taste.
This is a one pot recipe, so all ingredients go together and give a bit of themselves to each other, for a yumm end result.
