Warm, sweet and spicy, Hazelnut Soup is Rapunzel's Favorite Soup.
While Disney does not offer us a clear description of the ingredients that go into this soup, we know that hazelnuts are definitely part of the ingredients and we also see Mother Gothel bringing in fresh parsnip in her basket to use for the soup.
Interestingly enough, Rapunzel is the German word meaning rampion - a leafy plant with a parsnip like root. In a poetic way, Rapunzel's preference for this soup could be a hint to her not-so-obvious roots.
To make this soup delicious, we roasted the parsnip, along with onion and a sweet butternut squash.
We played on the citrusy nature of the parsnip and elevated it with a touch of fresh ginger. We also added a bit of nutmeg and star anise for extra warmth, flavor and spiciness.
