A wonderfully fresh mix of fruits and vegetables with a lemony dressing.
This has to be one of my favorite salad to make and munch on - and, funnily enough, the inspiration for this recipe did not come from any cook book. Instead, it came from a moment when I met an old friend for a bite and she recommended her favorite salad on the menu - one that I ended up loving so much that I would later go home and try to recreate it based on the ingredients. And just like a good friendship, this salad will can last a long time in the fridge - unless you can't wait that long and go in for another bite.
Just like with any other kale recipe, you will have to massage the dressing into the kale until every piece is coated.
I have also added super easy instructions for roasting your own sunflower seeds to add on top. Yum Yum!
