Sushi Salad
It tastes like sushi - yet it's as easy to make as any salad. Need I say more?

This is a recipe that I adapted from ACoupleCook. You can make it with rice for a full meal or you can omit the rice for a stand alone salad - it's going to be amazing either way.
You will need nori - roasted seaweed to make this sushi salad. I buy them already sliced, however if your favorite store has only whole nori sheets you can certainly buy those and slice them yourself.
If you're making this for a party: double the recipe and sprinkle a bit of roasted sesame seeds on top - to warn people with a potential allergy that there is sesame in it.
Otherwise, make the recipe twice - in 2 separate batches, to help keep your avocado from oxidizing.
