Stir fried Zoodles with homemade Meat Sauce and grated Parmesan

The Keto version of the romantic Spaghetti meat sauce.
As with all authentic keto recipes, making meals from scratch is the way to go.
It helps control all the foods that go into a meal and get you to the carbohydrate amount that you need, without exceeding it.
As you'll see in this recipe, a true keto is about precise measurements. This time we are not focusing just on volumes and all important ingredients will have their weights specified: we will need 1.2Kg Zucchini, 800g Tomatoes, 120g Parmesan cheese.
For those that have to follow a strict ketogenic diet, grams and even 0.1g matter and sometimes even something as small as spices can make or break a recipe.
Unlike a classic pasta-meat sauce recipe, this recipe has more meat sauce than zoodles. This helps preserve our desired target of 7g carbohydrate/ portion.
Some people prefer their zoodles raw, however we find them delicious when stir fried for a few minutes and opted for this option instead.
