Soupe à l'Oignon à la Bière noire

French onion soup with black beer from Gaspésie.

Made with caramelized onions, beef broth, coffee colored mushrooms and rich black beer and then topped with Melba toast and old cheddar cheese shavings, this French Onion soup is a winner.


While a black beer will add to the color and flavor to this dish, you can certainly use a dark beer or even a blond beer instead.


For those who have never made French onion soup and are afraid to because it looks too fancy: give it a try. You will be pleasantly surprised at how easy this is to make.
