Slow cooker Vegetarian Cassoulet

Gooey yumminess - that's also easy to make and good for you.

Since I did not go with a traditional stuffing for the Thanksgiving turkey stuffing this year, I decided to still use mirepoix - as base for this recipe.

What is mirepoix, you ask? It is a basic, inexpensive mix of vegetables - usually 2 parts onion to 1 part celery and 1 part carrots.


If possible, you should cube and dry your bread ahead of time - although I'm sure that if you omit this step it will not take away one bit from the the wonderful taste of this dish.


I chose to cook the onions and mushrooms before adding them to the slow cooker - for extra taste and extra space in the slow cooker.
