Slow Cooker Quinoa Enchilada

A colorful dish with melted cheese on top.

Black Beans, Corn, Red Peppers, Quinoa and Black Beans, topped and mixed with melting cheese only to make this satisfying dish. Just remember to buy some tortilla and you're all set.

Easy to make and almost mistake proof. I've made it with all the cheese mixed in the enchilada, with 1/2 of the cheese in the mixture and half on top to form a crust, I've even misread the recipe and put all the cheese in the beginning with the rest of the ingredients - and it still came out good.

We use a 6.6 L (7 qt) slow cooker for this dish.

One more thing: Consider adding more chili flakes if you like your dishes spicy.
