The first dish of our French menu, this bisque is a meal on itself.
Starting with a classic mirepoix - of onions, celery and carrots for flavor, this recipe uses butter (or margarine), tomatoes, white wine, bay leaves, cayenne pepper and a bit of tarragon to refine its taste.
The soup itself is easy to make, but also impressive for anyone that will taste it.
