Roasted Butternut Squash Soup

Full of color and full of flavor.

While this is primarily a fall recipe, roasted butternut squash soup makes a great comfort food any time of the year. The fact that squash is easily available any season helps also :)
This recipe does not require a lot of preparation. It will, however, require more time to make (60 minutes for roasting squash, carrots, onion and garlic + 60 minutes of simmering in the soup pot). This is why it is best integrated in a menu that allows you to make other dishes at the same time. Rest assured: the taste of the soup makes every moment of waiting worth it. You will feel the roasted vegetables and squash into every sip and love the smooth, creamy, warm yumminess tickling your taste buds. Is it obvious or very obvious that I love this soup?
