Pork Chops with a Rum-Apple- Roasted Red Pepper Sauce

A match made in Food Heaven.

This dish is part of the Menu of Foods with Real Chemistry - because the ingredients used in its making have a natural affinity for one another due to similar chemical components that make them a good match.
I have to say: unlike any previous week, this time I was particularly excited and also particularly nervous about the way these recipes would turn out - as they were 100% my own, directly from the drawing board.
This was the first recipe I made and tasted and it certainly helped get my courage back. Cooking it, plating it and actually tasting this unique combination of ingredients made me feel like I was running a fancy restaurant.
I chose pork chops as the main source of protein and cooked them simply - in a pan. I then deglazed the same pan with a small amount of rum and roasted red pepper, garlic and apple bites on top. To complete the sauce I added a touch of sour cream and used this to line the pork chops - as these ingredients compliment the pork beautifully.
This recipe is perfect for a date night.
