Lobio

Georgia bean stew, fragrant and refreshing.

If you read the subtitle and though to yourself: <Can a bean stew really be refreshing?>, I understand perfectly. I mean beans and refreshing don't normally go into the same sentence. But trust me, this stew really is refreshing! Come to think of it: don't trust me and make it yourself. It will be such a wonderful surprise for your palate.

Because I feel like spilling the beans (pun intended), I have to confess that there are 2 ingredients that make this dish so special. One is pomegranate concentrate. The other is a small bunch of mint. If you immediately though to yourself that it must be the these 2 ingredients that give this dish its freshness, you'd be right. Think sweet and sour, plus subtle minty taste - food heaven.

In order to provide you with enough protein, this dish combined red beans and walnuts. Yum, yum!
