Kung Pao Tofu

A vegetarian spin on a Chinese favorite that's pure deliciousness.
When putting together this week's menu of Budget friendly recipes we began the creative process with the protein rich choices - as this component of a recipe is usually the one that is the most expensive in a dish.
We knew we wanted a Tofu based recipe and we looked for inspiration to the nation that eats the most tofu in the world, People's Republic of China. We began by looking for traditional Chinese recipes that incorporate tofu. Our first choice was Mapo Tofu - as this is one of the most famous and beloved Chinese tofu dishes in the world, however keeping up with the theme of the week we soon realized that not all ingredients of this dish could be easily available to everyone and potentially more expensive.
Instead, we chose to insert tofu into another very popular Chinese dish and came up with Kung Pao Tofu... and weren't disappointed.
