Kiwi Salad

With Highlander Salad Dressing.

To bring everything together for this week's menu I wanted a salad that would have a bit of the old and a bit of the new - with elements that would represent New Zealand as a whole. I looked up in season ingredients and kiwiana recipes, did a bit of research on taste pairing and ended up with a recipe for a Kiwi Salad (notice the play-on-words?).
For those of you that don't know this: the term "Kiwi" describes all New Zealanders. Far from being a pejorative term, this is considered to be a term of endearment and a symbol of pride. Kiwiana is then the adjective that can describe New Zealand art, or recipes, or other.
The name derives from the name of New Zealand's national bird, the kiwi - not to be confused with the kiwi fruit... even though they are both cute and fuzzy.
Other then the strikingly beautiful kiwi, this salad incorporates the traditional watercress, a bit of sheep cheese and a popular New Zealand salad dressing: Highlander dressing.
Romaine lettuce is added for volume and fresh herbs to enhance and brighten the taste of the salad.
