Frikadeller
Danish meatballs.

Part of our Hygge themed menu, this dish pays homage to the Danes - for they are the happiest people in the worlds and the nation that came us with Hygge.
With few ingredients, these Danish meatballs are very tasty - especially if you marinade the meat ahead of time.
The addition of baking soda was my own doing - because I wanted bigger, fluffier, more airy meatballs. It worked!
Traditionally, Frikadeller is something that requires pan cooking, in butter - however we went for the healthier approach and made these in the oven. We kept the margarine/ butter to coat the pan as a reminder of the original recipe.
Serve Frikadeller with whole grain bread on the side and, in order to make for a complete meal, add a vegetable soup or a salad.
