Extra Cheesy Keto Pizza

With mushrooms, cherry tomatoes, black olives and cauliflower in the crust.

Since flour is a a bit of a no-no when it comes to keto, the traditional bread-like crust of this pizza got a creative make-up with cauliflower, eggs and lots and lots of cheese. We controlled quantities and the type of cheeses that go into its componence so that the final product has an overall ratio of 1:1 (fat: carbs + protein together) and about 7g carbohydrates per serving, in order to make it doable to have 20g carbohydrates per day (Modified Atkins Diet).
Mix all 3 ingredients together and spread it evenly on a cookie sheet. Don't worry if you leave a space of two, the cheese will melt and you'll end up with an even coverage.
After cooking the crust for 15 minutes, you'll add a second layer of grated cheese and vegetables.
We used mozzarella over the cheddar for a more authentic taste.
Slice your vegetables thinly and you'll have enough to cover a large pizza (like the one in the picture).
Once your pizza is assembled, you'll only bake it for an additional 10 minutes. A thin cut will mean that your toppings will not be undercooked when you take the pizza out of the oven.
