Between the 2 protein choices (chicken and cheese), lasagna noodles and spinach, lasagna is pretty much a complete meal on its own.
This dish is also very easy to make, requires only a few ingredients, makes for a lot of portions and packs extremely well for lunch - no spills, no mess, easy to reheat.
