This recipe is adapted from a rustic Romanian recipe called "Ciulama".
For my Romanian friends: If you want to make the classic Ciulama, know that I've added non-keto specifications at the end of the recipe.
While the original recipe uses wheat flour for the Béchamel sauce, we made it keto friendly by using almond flour instead and still loved the end result.
The original recipe is made using giblets and gizzard. Before you say your "Eww!", know that you can use chicken drums or thighs instead. They will make for a great substitute for both taste and keto ratio.
Traditionally, this recipe is served with polenta on the side. This is not recommended for those following a ketogenic diet.
